| Whisky | First batch ready December 2023 and will be a heavily peated
"Islay" scottish style whisky. 110 X 500ml bottles only at $140
each. Second batch will be a year later and is unpeated. |
| Dry Gin | Dry Gin: A traditional london style dry gin |
| Citrus Gin | Citrus Gin: Based on the dry gin but with a significant amount of grapefruit peel which is particularly noticeable in the aroma. This is my best selling gin by a large margin. |
| Blue Gin | Blue Gin: This is the dry gin with Thai Blue Butterfly Pea Flowers added. This provides the distinctive blue color but as good as no flavour. However, the flowers have the effect of making the gin change to a pale pink color if anything acidic is added. Even soda water and tonic water are acidic enough to do this. |
| Raspberry Gin | Raspberry Gin: A base gin with raspberrys left to soak in it a minimum of one week before removal and bottling. |
| Blackberry Gin | Blackberry Gin: A base gin with blackberrys left to soak in it a minimum of one week before removal and bottling. Hadnt planned on making this but my nephew insisted I try it and gave me the first batch of blackberrys. Proved very popular so will keep making it. Available from late summer until sold out. |
| Blood Orange Gin | Blood Orange Gin: Seasonal product as blood oranges are only available in Australia for about 2 months of the year. Oranges are left soaking in gin for two weeks before bottling. The cut oranges absorb some of the alcohol so this is usually a bit lighter in alcohol than the other gins. |

| Moonshine | Moonshine: Made in small batches and not always available. Moonshine is basically whisky that is too young to be legally called whisky. American moonshine was traditionally corn whisky that wasnt aged on oak at all. Mine is more a scotch style and is aged on oak very briefly just to obtain a whisky like color. The smaller batches tend to vary alot in flavour. |
| Rum | Rum: Real fully aged Rum is not available yet. |
| Cane Spirit (Oaked) | Cane Spirit (Oaked): What is it? Well its rum but Australia has some
very unusual laws about rum because it was used as a form of currency
in the Colony of New South Wales for a period. Any rum that has not been
aged for a minimum of 2 full years in an oak barrel cannot legally be
sold as rum in Australia. This rum is aged for a shorter period and hence
can only be sold as "Cane Spirit". Highly aromatic made with a high proportion of molasses. |
| Cane Spirit (white Rum) | Cane Spirit (white Rum): Rum thats bottled straight out of the still and never touches oak at all. |
| Apple Brandy | Apple Brandy: Made from apples grown locally in the upper yarra. Crushed then fermented into a type of apple cider before being double distilled then aged in oak barrels. Only occassionally available due to oak-aging requirements. |
| Brandy | Brandy: Temporarily available. Made from an Italian red wine. A portion aged in heavily toasted French oak, the rest on medium toasted American oak. |
| Vodka | Vodka: Not currently available but an ongoing project. I'd always assumed making vodka would be easy. Making mediocre vodka is easy but making good vodka is extremely difficult. Though most vodka is made from grain (usually wheat) I want to experiment in making potato vodka and whey based vodka as well. |
| Limoncello | Limoncello: Occassionally available at 35 to 38% alcohol Limoncello is an italian liquer made from Lemon Peel. |
